Although inspired by traditional Scottish distilleries, Founder, Shinjiro Torii envisioned a new Japanese approach to whisky by choosing a location offered a vastly different climate than Scotland. Situated near three rivers, the Katsura, Uji and Kizu, Suntory Distillery is Japan's first whiskey distillery.
Toki means time in Japanese, which is aptly named because it takes time to craft perfection, which exactly what Chief Blender Shinji Fukuyo had to do when deviating from the distilleries signature blend.
His new approach for Suntory Toki Japanese Whisky, utilizes Hakushu malt whisky aged in American white oak and Chita heavy-type grain whisky. Lastly, Fukuyo added both American white oak-aged and Spanish oak-aged malt whisky from Yamazaki, creating a triad of sophisticated flavor.
